Warm chicken, feta and grilled peach salad


Hot, innit?

When it's this hot and muggy outside, pie and chips is off the menu. For me at least!

What's on the menu? Lighter lunches. Simple suppers. 

Warm chicken, feta and grilled peach salad.

You will need: (for two)
1 chicken breast
1 peach
A chunk of feta cheese
Lettuce leaves
Cucumber
Cherry tomatoes

For the dressing:
Olive oil
White wine vinegar
Wholegrain mustard
Sugar 
Salt and pepper 
Lemon juice

The how to is simple! Grill the chicken in a griddle pan, and leave to one side. Slice the peach and in the same pan, add the slices flesh side down. Grill for a few minutes on each side. Prepare your salad (I use lettuce, cucumber and cherry tomatoes but freestyle!) and then add the chicken (sliced), grilled peaches and crumble feta over the top. 

For the dressing, measure one part white wine vinegar to three parts olive oil, before adding a teaspoon of wholegrain mustard, half a teaspoon of sugar, a squeeze of lemon juice and mix! Add salt and pepper to taste, before giving a final shake.

Serve with a cold glass of white, with the salad dressing on the table and chunks of crusty bread or warm flatbreads.
